Greek Oven opens in Maui

A Greek restaurant called Greek Oven Maui has opened in Haiku Aloha Aina Center in Maui.

The Greek Oven Maui specializes in healthy, handmade food for breakfast and lunch, including gluten-free bread and vegan options.

The restaurant is the product of Greek owner Adonis Kapsalis and his Brazilian wife, Santuzza, who moved to Maui in December 2015 with the intention of becoming Realtors. After meeting Greek baker Lilia Bimiari at a local farmer’s market and trying her gluten-free desserts, their plans changed and the idea to open a Greek eatery was born.

Bimiari, who always wanted to open her own bakery, will be the head chef and baker for the restaurant.

Everything Lilia makes is truly amazing, and we wanted to share that with the people in Hawaii,” Kapsalis said. “Maui does not have many healthy options, so this will be a great option for people who love fresh and organic foods.

Santuzza Kapsalis, who is currently pregnant with the couple’s second child, and is in charge of the design of the store.

The revolving menu will sell sandwiches, salads and other savory offerings as well as Bimiari’s gluten-free breads, pies and pastries including greek staples such as baklava and spanakopita.
